Working in the galley of a cruise ship

The food is the one of the most important areas of a luxury liner since the majority of time spent while on a vacation revolves around food. On a ship, not only food has to be in abundance, but also exceptionally good, if not excellent.

Usually, the applicants for this type of jobs would be required to have a good past record and extensive experience in the restaurant business or ships. The jobs for the galley are divided into two main categories, i.e. jobs for the hot galley (grills, soups and fish) and jobs for the cold galley (buffets, baking and pastries).

The cooking staff are supported by as big a team whose sole job is cleaning the kitchens. This team is called as the utility division. Their duties involve washing dishes, cleaning the tables, changing the table cloths, keep the restaurant and other areas of eating (bars, lounges, etc) clean and presentable.

Each of the galley jobs is listed below in a descending order of hierarchy, with a brief description:

  • Executive chef: This is as prestigious a position as you would find in any five/seven star hotel on land. The job and responsibilities that this job entails might a bit more than its counterpart on land though. The Executive Chef is the overall manager of the Galley; he/she would have to manage, coordinate and sustain the highest quality control while managing the galley without a hitch. The applicant should have about ten years of experience in reputed hotels or restaurants; have good command over English language and have appropriate qualifications (completed culinary school education).The salary matches the best in the industry with a range of US4300-5300 depending on the type of ship.
  • Asst. Executive Chef: The incumbent here would be expected to assist the Chef in his/her duties while at the same time acting as an administrator for the Galley. He/she will be responsible for the quality control, menu planning and overall food presentation on the ship. The applicant should have at least 4-5 years experience in a similar position on land or a ship, know English well, and have completed relevant culinary school. The salary earmarked for this job is between US -4000.
  • Chef de Partie: he/she will be responsible for the buffets planning and execution. The applicant should have at least four years of experience in a similar position on land or ship, completed the culinary school and speak English fluently. The salary for this job is the same as that of the Assistant Chef.
  • First cook: This is a supervisory position that would require managing and coordinating the jobs of the second and third cooks, the pastry cooks, the bakers as well as the management of the store and provisions. The applicant would need to have at least two years of experience in this line on land or ship as well as be fluent in English. He/she should have completed the culinary school education. The salary is fixed between US and 2200.
  • Second & Third Cooks: The incumbents would be required to supervise the cooking and baking and assist the First Cook in delivering his/her duties. The applicant should have at least one years relevant experience, know English fairly well, and would have completed the culinary school. This job comes with a salary of US -1600 per month. From this post you can expect to be promoted to First Cook within 2-3 years.
  • Cook Trainee: The incumbent would be responsible for the different cooking tasks and be answerable directly to the First Cook. The applicant would be required to have some previous experience, know English sufficiently and have completed the culinary school education. The job comes with a salary of US -900 per month and the possibility of a swift promotion to the post of Third Cook.
  • Crew Cook/ Crew Cook Assistant and Crew Cook Trainee: All these people would be responsible for cooking under the direction and supervision of he First Cook. The requirements for this job are exactly the same as that of the Cook Trainee and the salary ranges between US -1200.
  • Crew cook/ Crew Mess-man: This job entitles the overall cleaning and maintenance under the orders of the First Cook. This position is quite low paid with a range of US to US . The applicant would be required to know some English; no experience is necessary though some culinary school education would be an advantage.
  • Provision Master/ Store keeper: This post would oversea the management and procurement of all kitchen supplies and be answerable directly to the Chef Cook. The requirements for this job include food & beverage education, good command over English and good accounting skills. The salary for this job ranges between US and 1600.
  • Assistant Provision Master/ Assistant Storekeeper: This job would entail the coordination and management of food stock and supplies as instructed by the Provision Master. The requirements for this job are the same as the position above. The salary bracket for this post is US -1600 per month. The incumbent can expect promotion to Provision Master within 1-2 years.
  • Pastry Chef Supervisor: He/she would be manage and coordinate and pastry staff in preparing pastries. The applicant would be required to have at least three years experience in a similar position, good command over English and have completed the culinary school. The salary will range between US and 2400, depending on the ship standards.
  • Assistant Pastry Supervisor: The applicant would be required to have the same qualifications and experience as above and would be responsible for assisting the Pastry Chef Supervisor. The salary for this job is earmarked at US -2100.
  • Pastry Man: The incumbent here would be responsible for the preparation of the pastries under the instructions and supervision of the Pastry Chef Supervisor. The applicant would need to have at least two years of similar experience on land or a ship, know English fairly well and have a culinary background. The salary for this post is between US and 1500. The incumbent could be promoted to the post of Pastry Chef Supervisor within 2 years time.
  • Pastry Trainee: The applicant would need to have some culinary background and at least one year of experience in a similar position as well as know English fairly well. The incumbent would be required to assist the Pastry Chef Supervisor in cooking and preparation of pastries, and supervise the cleaning and maintenance of the pastry kitchens.
  • Baker supervisor: The incumbent would mainly supervise the baking section. He/she would be required to have completed their culinary education, have 3-4 years in a similar position and know English well. The salary for this job ranges between US and 2300.
  • Assistant Baker supervisor: He/she would be responsible for the supervision of all the baking staff and assist the Baker Supervisor in his/her duties. The requirements for this job are exactly the same as above. The salary ranges between US and 1900. The incumbent can expect promotion to the Baker Supervisor position within 1-2 years.
  • Baker: The baker is responsible for preparing and baking of food as per the instructions of the Baker Supervisor. The applicant would be required to have at least 2 years experience in a similar position and know English fairly well. The salary would range between US -1900. The inclement can expect promotion to the Baker Supervisor post within 1-2 years.
  • Baker Trainee: The trainees job would be to assist and prepare all the bakery products under the direction and supervision of the Baker Supervisor. The applicant would be required to have at least one year experience, know English fairly well and have a culinary background. The salary ranges between US and 1300 per month.
  • Galley cleaner: This job entails the cleaning and maintenance of the galley in totality. This is an entry level position where the applicant does not need to have any experience as such; basic knowledge of English would be necessary though. The salary ranges between US and 700 per month.
  • Dish/Pot washer: This an entry level position which required no experience as such. Knowledge of English can be the minimum possible. As the name suggests the incumbent would be hired for washing the dishes. The salary ranges between US and 600. The position has the option of promotion to the post of Assistant Cabin Steward (Housekeeping).
