How do I create a resume for engineering jobs when I was an engineer for 8 years, but I haven't been doing real estate and loans for the last 20 years?

Not sure here...are you trying to create a resume for the engineering or the other? Your post is a bit confusing. May I recommend you come up with the basic parts and then put it on here [minus your personal info] for critiquing and help?
