What if most of my skills have been gained through projects while at school, even though I have worked for a period. Should I include the skills gained at school in my CV?

Your tertiary education and employment after school is the most important. You can list the skills gained at school when they are relevant to the advertised job, but list them under 'Other skills' in your CV.
